Concept study — not client work

F&B Development
A financial and market test of a specific concept in a specific location, built on stated assumptions you can argue with.
Investment decisions in F&B are usually made on a single optimistic scenario. Knowing which assumptions the outcome hangs on is worth more than the headline number itself.
The study covers the catchment and its competitive set, a demand estimate built from stated assumptions, the investment required, the operating cost structure, a revenue model by daypart and channel, break-even, and a sensitivity analysis showing which assumptions the result actually depends on.
Every number is traceable to an assumption, and every assumption is labelled as one. Where an input is unknowable, the study says so and models the range rather than choosing a comfortable figure.
A feasibility study that only produces an encouraging number is worthless. The value is in the sensitivity analysis: knowing which two or three assumptions decide the outcome, and how wrong they can be before the answer changes.
Location, concept and the questions the study must answer.
Catchment, competitive set and cost inputs gathered.
Revenue, cost, investment and break-even built.
Sensitivity run on the assumptions that matter.
If the numbers say so, yes. A study that only ever confirms the plan is not a study.
It is written to be reviewed by a third party, with assumptions stated so a lender or investor can test them.

ArticleDefining a concept before designing itMost F&B concepts are a cuisine and a location. That is a description, not a proposition — and it is why the design, the menu and the marketing end up pulling in three directions.Tell us about the business and what you need, and we will come back to you.
