To compare items on the money they contribute rather than on the ratio they post.
Contribution is what an item adds to the business after the costs that vary with it. It is the number that decides whether a popular item is worth its place, and it is frequently at odds with the food cost percentage.
An item with a worse ratio and higher volume can contribute several times more money than one with an excellent ratio that nobody orders. This calculator shows both so the comparison is honest.
How to read this
Monthly contribution is the number that decides whether an item earns its place on the menu — a small margin on a popular item often beats a large margin on a rare one.
